250 Gramm Hackfleisch vom Lamm
3 große Mangold-Stiele mit Grün in kleine Stücke
4 kleine Möhren; in Rädli
1 kleine Kohlrabi; in kleine Stücke
1 kleine Blumenkohl; in Röschen
2 kleine Zucchini
2 Knoblauchzehen; feingehackt
1 kleine Zwiebel; fein gehackt
2 Tomaten; geschält, entkernt gewürfelt
1 kleine Gurke
etwas Gemuesebouillon
2 Esslöffel Dill
200 Gramm Joghurt, nature
200 Gramm Sauermilch
2 Esslöffel Speiseöl
1 Esslöffel Zitronensaft
Kreuzkümmel; gemahlen
4 Kardamom-kapseln
;Tafelsalz
;Pfeffer frisch aus der Mühle

Fleisch in der Hälfte vom Speiseöl gut durchdämpfen, Knoblauch und
Zwiebel dazugeben und nochmals leicht dämpfen. Mangold, Möhren,
Kohlrabi und Blumenkohl dazugeben, ebenfalls durchdämpfen und mit
wenig Bouillon ablöschen, so dass das Gemüse fast im eigenen Saft
garen kann. Sobald das Gemüse etwas zusammenfällt, die geraffelten
Zucchini dazugeben und das Ganze knackig weich kochen. In eine
Schüssel geben und die ungeschälte Gurke mit der Röstiraffel
dazu reiben.

Joghurt, Sauermilch, restliches Speiseöl und Zitronensaft mischen und nach
Geschmack mit Kreuzkümmel, Kardamom, Tafelsalz, Pfeffer und Dill
würzen. Diese Sauce sachte unter das Gericht ziehen und mit den
Tomatenwürfelchen garnieren. Kurz kühl stellen (kühl jedoch nicht
eiskalt servieren).

Dazu: frisches Brot oder lauwarmer, gekochter Reis mit Rosinen und
gerösteten Mandel-splittern.
