Kartoffel-Gemüse-Rösti mit frischem Rahm

Menge: 2 Portionen als Hauptspeise

Rösti

125 Gramm Kartoffeln, geschält, mehlig kochend
50 Gramm Möhren
50 Gramm Zucchini
25 Gramm Zwiebeln
1 Teelöffel Thymian-Blättchen
Kräutersalz
Pfeffer frisch aus der Mühle
Kokosfett

Gemüsebeilage

1/4 Sellerieknolle
2 Möhren
1 Zucchini
1/2 Paprika, gelb
1/2 Paprika, rot
3 Esslöffel Sonnenblumenöl
1/2 Knoblauchzehe, zerdrückt
1 Teelöffel Kapern, feingehackt
1/2 Schale einer Orange, abgerieben
Kraeutersalz
Pfeffer frisch aus der Mühle

Rahmsauce

2 Esslöffel Sahne, süß
2 Esslöffel Joghurt
2 Esslöffel Schnittlauchröllchen

Für die Gemüsebeilage alles putzen, in sehr kleine Würfel
schneiden (sogenannte Brunoise), getrennt bereitlegen.

Zuerst die Sellerie- und Möhrenwürfelchen zusammen mit dem
Knoblauch in Öl dünsten. Nach etwas 3 Minuten - das Gemüse
muss halbgar sein - Zucchini, Paprikaschoten, Kapern und
Orangenschale zufügen, kurz mitdünsten und mit Salz und Pfeffer
abschmecken. Warm-stellen.

Für die Rösti, Kartoffeln, Möhren, Zucchini und Zwiebeln grob
raffeln, Thymian dazugeben, mit Salz und Pfeffer würzen. Vor
dem Braten die Flüssigkeit etwas herausdrücken, aus der Masse
von Hand kleine, flache Küchlein formen, in heißem Kokosfett von
beiden Seiten knusprig braten und auf warmen Teller legen.

Mit der Gemüsebeilage - zum Beispiel mit 2 Esslöffeln zu Nockerln
geformt - garnieren, alles mit Schnittlauch bestreuen
und mit der Rahm-Joghurt-Mischung servieren.
