10 Gramm getrocknete Muerr-Pilze
150 Gramm Möhren
1/2 Zwiebel
1 Knoblauchzehe
1 Esslöffel Sojaöl
1 Teelöffel Korianderkörner
3 Esslöffel Sojasauce
etwas Tafelsalz
etwas weißer Pfeffer frisch aus der Mühle
1 Bund Schnittlauch
75 Gramm Erdnusscreme
1/2 unbehandelte Zitrone; Saft und Schale davon
1 Ingwerstück haselnussgross
1/2 Teelöffel Zucker
100 Milliliter Kokosmilch
1/2 Teelöffel Sambal Oelek
16 Blatt Reispapier; 22 Zentimeter Durchmesser
1 Liter Speiseöl zum Frittieren

Pilze mit heißem Wasser übergießen und darin 20-30 Minuten
quellen lassen.

Möhren und Pilze in dünne 3 Zentimeter lange Streifen schneiden. Zwiebel
und Knoblauch würfeln. Im Öl andünsten. Koriander im Moerser
zerstoßen und dazugeben. Mit 2 Esslöffel Sojasauce, Tafelsalz und Pfeffer
würzen. Schnittlauch in Röllchen schneiden und unterheben.
Füllung abkühlen lassen.

Erdnusscreme, Zitronensaft und -schale, Ingwer, Zucker und
Kokosmilch im Mixer pürieren. Sauce mit Sambal Oelek abschmecken.
Reispapier anfeuchten und auf nassen Küchenhandtüchen
ausbreiten. Je 1 Esslöffel Füllung darauf geben. Reispapier oben und an
den Seiten einschlagen, dann aufrollen. Bis zum Frittieren in ein
nasses Handtuch einschlagen. Frühlingsroellchen portionsweise im
heißen Speiseöl knusprig und goldbraun frittieren.
