Kürbis-Chutney mit Salbei

Menge: 5 Portionen

1.5 kg Kürbisfleisch
3 Zitronen (Saft von)
1/4 l Weißweinessig, (5%ig)
200 g Zucker
2 tb Salz
3 tb Senfkörner
4 Zwiebeln
1 Knoblauchzehe
1 bn Salbei

Kürbisfleisch in Stücke schneiden und mit Zitronensaft, Essig,
Zucker, Salz, Senfkörnern, Zwiebelwürfeln und ausgepreßter
Knoblauchzehe unter ständigem Rühren aufkochen, bei milder Wärmezufuhr
reduzieren, bis die Flüssigkeit fast verdampft ist.
Salbei grob hacken, dazugeben und 10 Minuten unter Rühren fortkochen.
Chutney kochendheiß randvoll in Gläser füllen und diese sofort
verschließen.
