Menge: 5 Portionen

1300 g Kartoffeln
40 g Fett
3 lg Lauchstengel
1 tb Salz
Wasser
1/8 l Milch

Gebleichter Lauch, von dem man alle Blaetter entfernt hat, wird nach dem
Waschen in feine Streifchen geschnitten und in dem heissen Fett gelb
gedaempft.

Unterdessen schneidet man die roh geschaelten Kartoffeln in feine Blaettchen
gibt sie dem gedaempften Lauch nebst Salz und soviel Wasser zu, dass die
Kartoffeln je nach dem Wassergehalt zur Haelfte oder 3/4 mit Wasser bedeckt
sind. Gut zugedeckt laesst man sie langsam fast weich daempfen. So dann gibt man
die heisse Milch darunter und kocht das Gericht vorsichtig gar.
