1/8 l Sherry
1/8 l Wasser
Salz
2 tb Butter
1 tb Weinessig
Pfeffer, weiss
4 Eigelb

Mangold waschen, Stiele von den Blaettern loesen und in fingerlange
Stuecke schneiden, Blaetter grob zupfen. Sherry und Wasser mit Salz
erhitzen und zum Kochen bringen, Stiele hineingeben und zugedeckt 5
min. duensten. Mangoldblaetter zugeben und 3 min. mitduensten,
abseihen und die Fluessigkeit auffangen. Butter in die Fluessigkeit
geben, erwaermen, Essig zugeben. Eigelb mit dem Schneebesen
unterschlagen und die Sosse vorsichtig erhitzen, bis sie eine
dickliche Konsistenz hat, abschmecken. Mangold auf eine vorgewaermte
Platte geben und mit der Sosse servieren.
