Mangoldgemüse mit Hähnchenbrust

Menge: 4 Portionen

1 Staude Mangold (ca. 500 g)
1 sm Gruene Paprikaschote
1 sm Rote Paprikaschote
2 Zwiebeln
1 Knoblauchzehe
100 g Champignons (vorzugsweise
- Steinchampignons)
150 g Kartoffeln
300 g Haehnchenbrust
100 g Geraeucherten Speck;
- durchwachsenen
30 g Butter
20 g Oel
Salz
Bunten Pfeffer; aus der
- Muehle
1 tb Curry
Einige Spritzer Zitronensaft
1/2 l Gemuesebruehe

Mangold und Paprikaschoten putzen, waschen.

Mangold in Stuecke, Paprika in Streifen schneiden. Zwiebeln und Knoblauch
abziehen, Zwiebeln achteln, Knoblauch fein wuerfeln. Champignons putzen (siehe
Tipps) und halbieren. Kartoffeln schaelen, waschen und in Stifte,
Haehnchenbrust und Speck in Streifen schneiden. Butter und Oel in einem
grossen Topf erhitzen, Speck und Haehnchenfleisch darin anbraten,
vorbereitetes Gemuese (ausser Mangold) zugeben, 5 Minuten duensten. Dann
die Bruehe angiessen und alles weitere 15 Minuten garen. 5 Minuten vor Ende
der Garzeit den Mangold zugeben. Gemuese pikant abschmecken und servieren.

Unsere Tipps:
Pilze (außer Pfifferlinge) sind sehr heikel mit Wasser, sie saugen es auf und dann haben
Sie nur Wassergeschmack. Deshalb sollten Sie die Pilze auch nie ins Wasser legen.
Stattdessen bemehlen Sie sie bitte mit zwei Esslöffel weißem Mehl (in einer Schüssel)
und putzen das Mehl mit einem Pinsel ab. Das weiße Mehl wirkt wie Schmirgelpapier
und die ganzen Verunreinigungen gehen so leicht von den Pilzen ab.

Curry entfaltet seinen guten Geschmack übrigens nur wenn Sie Ihn ordentlich Erhitzern und anrösten:
Schieben Sie dafür die Zutaten im Kochtopf am besten mit einem Kochlöffel an den Topfrand, geben
Sie den Curry in die Mitte und rösten Sie ihn bei großer Hitze unter gelegentlichem Rühren (nicht schwarz werden
lassen) 1 - 2 Minuten an. Danach vermischen Sie die Zutaten bitte wieder mit dem Kochlöffel und bereiten
sie Suppe weiter wie oben beschrieben zu. Wir verwenden übrigens immer Gewürzküche Madras Curry,
Grünes Laos Curry oder Curry-Pulver von Le Gusto aus dem Aldi (unbezahlte Werbung)!
