500 g Okras
4 Tomaten
2 Zwiebeln
2 Knoblauchzehen
1 2 cm Stueck frischer Ingwer
4 Bratbutter
1 ts Kreuzkuemmel; gemahlen
1 ts Koriander; gemahlen
1 ts Edelsuesser Paprika
1/2 ts Kurkuma
1/2 ts Fenchelsamen; gemahlen
1/4 ts Chili
3 dl Kokosmilch; Menge anpassen

Die Okras waschen und die Spitze sowie den Stielansatz abschneiden.
Reichlich Wasser aufkochen. Die Okras hineingeben und zwei bis drei
Minuten blanchieren; damit verhindert man, dass sie beim Kochen
schleimig werden. Abschuetten und gruendlich kalt abschrecken. Die
Tomaten waschen, den Stielansatz herausschneiden und die Fruechte
wuerfeln. Zwiebeln und Knoblauch schaelen und fein hacken. Den Ingwer
schaelen und fein reiben.

In einer grossen Pfanne die Bratbutter erhitzen. Zwiebeln beifuegen
und kraeftig anbraten. Dann Knoblauch und Ingwer beifuegen und unter
staendigem Ruehren ebenfalls gut anbraten. Kreuzkuemmel, Koriander,
Paprika, Kurkuma, Fenchelsamen und Chili beifuegen und zwei bis drei
Minuten mitroesten. Am Schluss die Okras dazugeben und ebenfalls kurz
anbraten.

Die Tomaten und die Kokosmilch beifuegen. Salzen und einmal kraeftig
aufkochen. Dann das Gericht zugedeckt auf kleinem Feuer
fuendundzwanzig bis dreissig Minuten kochen lassen, bis die Okras
weich sind; gelegentlich sorgfaltig umruehren.

Mit Basmatireis oder indischem Fladenbrot servieren.
