300 g Paprika, rote
300 g Paprika, gruene
300 g Paprika, gelbe
3 Chilischoten, frische
200 g Zwiebeln (= 2 Stueck)
4 Knoblauchzehen
4 tb Olivenoel
600 g Tomaten, reife
1/8 l Rotwein
4 tb Weinessig
Salz
2 tb Petersilie, glatte gehackte


Die Paprikaschoten halbieren, die Samen und die weissen Trennwaende
herausschneiden, kurz unter fliessendem kalten Wasser waschen, dann in
2 cm grosse Stuecke schneiden.

Die Chilischoten laengs aufschneiden, die Kerne entfernen und die
Haelften in Streifen schneiden.

Die Zwiebeln und die Knoblauchzehen schaelen und fein hacken.

Das Olivenoel in einem grossen Topf heiss werden lassen, die Zwiebeln und
den Knoblauch darin glasig werden lassen. Die Paprikastuecke und
Chilistreifen zugeben und unter Ruehren 3-4 Minuten schmoren.

Die Tomaten einritzen, kurz in kochendes Wasser halten und haeuten. Die
Tomaten halbieren, die Kerne ausdruecken und die Haelften in groessere
Stuecke schneiden und in den Topf geben. Den Rotwein und den Essig
zugiessen, salzen und zugedeckt bei schwacher Hitze 20 Minuten koecheln
lassen. Den Deckel abnehmen und 5-6 Minuten weiter kochen lassen.

Nochmals abschmecken und die Petersilie unterruehren.

Dazu reicht man frischen Weissbrot und einen gruenen Salat.
