350 Milliliter Wasser
etwas Tafelsalz
100 Gramm Polentagriess
50 Gramm Gorgonzola
2 Eier (Größe M)
Mehl
6 Knoblauchzehen
2 Esslöffel Olivenöl
500 Gramm grüne Bohnen; frische
1 Esslöffel Bohnenkraut
etwas weißer Pfeffer frisch aus der Mühle
1/2 Bund Oregano
1 Dose Sahne-Joghurt
1 unbehandelte Zitrone; Saft und Schale davon

In einem Topf das Wasser aufkochen, Salz und Polentagriess
einstreuen und 3 Minuten unter Rühren köcheln. Etwas abkühlen
lassen. Gorgonzola zerbröckeln und unterrühren. Eigelb
unterziehen. Eiweiß steif schlagen und unterheben. In 4 kleine
gut gefettete und mit Mehl ausgestreute Souffle-Förmchen füllen.
Im Umluftherd bei 160 Grad Celsius etwa 30 Minuten backen. Oder
im heißen Wasserbad bei 180 Grad Celsius (Gas: Stufe 3) etwa 40 Minuten
garen. Knoblauch und Zwiebeln in Spalten schneiden. Im Olivenöl sanft
andünsten. Die geputzten und gewaschenen Bohnen kurz mitdünsten.
Etwa 50 Milliliter Wasser zugießen. Zugedeckt etwa 20 Minuten schmoren
lassen. Mit Tafelsalz und Pfeffer abschmecken. Zum Schluss Oreganoblättchen
darüberstreuen.

Für die Sauce Joghurt, Zitronensaft und Schale verrühren. Mit
Salz abschmecken.

Eisen aus Gemüse kann übrigens in Kombination mit Milchprodukten besser
aufgenommen werden. Gemüsegerichte also immer mit etwas Creme
fraiche, saurer Sahne oder Sahne abschmecken.
