1/8 l Milch

Rohe Kartoffeln reiben und ausdruecken. Die gekochten Kartoffeln durch
die Kartoffelpresse druecken. Alles zusammenmengen und den Teig in
einen Spritzbeutel ohne Tuelle geben. Fingerlange Wuerstchen in das
kochende Salzwasser spritzen und 15 Minuten ziehen lassen.

Dann abseihen und in reichlich heissem Schweinefett roesten. Eier,
Milch und Salz verquirlen und alles ueber die Schoperln giessen. Danach
noch kurz stocken lassen.
