Spargel mit Orangenschaumsoße

2 kg Spargel; weiß
Salz
1/2 ts Zucker
4 Putenschnitzel (Ã 150 g)
4 tb Öl
Pfeffer; weiß
1 Orange; unbehandelt
3 Eier
150 g Crème fraOche
Orangenscheiben
Kerbel
- zum Garnieren

Zubereitung : 40

Spargel schälen, holzige Enden abschneiden. Spargel in leicht gesalzenem
Wasser mit etwas Zucker ca. 20 min garen. Schnitzel waschen und
trockentupfen. Im heißen Öl von jeder SEite 4-5 min braten. Mit Salz und
Pfeffer würzen. Orange waschen, trockentupfen, die Schale abreiben, den Saft
auspressen. Eier trennen. Eigelb mit Orangensaft im heißen Wasserbad
auschlagen. Crème fraOche und Orangenschale unterrühren. 2/3 der Eiweß und 1
Prise Salz steif schlagen, unter die Soße heben. Spargel und Fleisch auf
Tellern anrichten. Etwas Orangen-Soße über den Spargel geben. Mit halbierten
Orangenscheiben und Kerbel garnieren. Restliche Orangen-Soße extra dazu
reichen. Dazu schmecken neue Kartoffeln.
