500 g Spargel
50 g Butter
100 g Krabben
2 tb Mehl
1/4 l Spargelbrühe
1 c Weißwein
1/8 l Sahne
Salz
Zucker
Pfeffer
Estragon
4 hartgekochte Eier

Spargel garen. Krabben in Butter kurz andünsten, herausnehmen. Butter mit
Mehl mischen, hell anschwitzen. Mit Spargelbrühe und weißwein ablöschen,
aufkochen, Sahne zugenen und cremig einkochen.
Mit Salz, zucker, Pfeffer und Estragon würzen. Spargel in Stücke
geschnitten, Krabben und die hartgekochten, geviertelten Eier einlegen.
