200 g Mehl
100 g Butter
1 Ei
1 ts Salz
Mehl zum Ausrollen

500 g dünner, weißer Spargel
250 g grüner Spargel
Salz
1 ds Zucker
1 ts Butter
200 g Kasseler--Aufschnitt
100 g mittelalter Gouda
1 pk Schlagsahne (250 g)
3 Eier
weißer Pfeffer
geriebene Muskatnuß

1. Mehl auf eine Arbeitsfläche geben. In die Mitte eine Vertiefung drücken.
Gut gekühltes Fett in Flöckchen, Ei und Salz hineingeben. Mit einem Messer
durchhacken, bis sich die Zutaten etwas verbunden haben. Dann mit den
Händen schnell einen glatten Teig zusammenkneten. Teig zu einer Kugel
formen und in Folie gewickelt 30 Minuten kalt stellen.
2. Weißen Spargel dünn schälen und die Enden etwas abschneiden. Grünen
Spargel waschen, entweder am unteren Ende dünn schälen oder die Enden
großzügig abschneiden.
Spargel in ca. 4 cm lange Stücke schneiden. In kochendem Salzwasser mit
Zucker und Fett 10 -- 12 Minuten garen. Dann abtropfen lassen.
3. Kasseler in Streifen schneiden. Käse grob raspeln. Sahne, Eier und
Käse verquirlen. Danach mit Salz, Pfeffer und Muskatnuß abschmecken.
4. Mürbeteig auf einer bemehlten Arbeitsfläche 1/2 cm dünn ausrollen
und eine Springform (26 cm Y) damit auslegen. Dabei den Rand 4 cm
hochziehen und mit einem Kuchenrädchen gerade abschneiden. Den Boden mit einer
Gabel einstechen.
5. Spargel und Kasseler darauf verteilen und die Eisahne
darübergießen. Im vorgeheizten Backofen 45 -- 50 Minuten backen.
