175 Gramm Tamarinde
2 Esslöffel Butterschmalz
1 Teelöffel Kreuzkümmelsamen
2 Esslöffel Ingwer; frisch
2 Grüne Chilis; gehackt
1/2 Teelöffel Pfeffer (frisch aus der Mühle)
1/4 Teelöffel Asafoetida; kann entfallen
300 Milliliter Molke; oder Wasser
100 Gramm Brauner Zucker
1 Ananas; grob gewürfelt
3 Möhren; in Scheiben
2 Teelöffel Mangopulver
2 Teelöffel Paprikapulver
2 Teelöffel Koriander; gemahlen
275 Gramm Paneer; gewürfelt
3 Zucchini; grob gewürfelt
4 Tomaten; geviertelt
2 Teelöffel Tafelsalz
3 Kochbananen; in Scheiben

4 Kartoffeln; grob gewürfelt (festkochend)

Zunächst den Tamarindensaft zubereiten. Den Butterschmalz in einem
großen Topf erhitzen und der Reihe nach den Kreuzkümmel, den Ingwer
und die Chili andünsten. Als nächstes den gemahlenen Pfeffer und
die Asafoetida hineingeben. Ein paar Sekunden danach die Molke
zugeben und zum Sieden bringen.

Nun den Tamarindensaft (siehe Tamarindensaft - Grundrezept), die
Ananas, die Möhren, den Paprika, den Koriander und das Mangopulver
beifügen, zum Kochen bringen und eindicken lassen. Gelegentlich
umrühren, damit nichts anbrennt.

Inzwischen die Paneerwürfel frittieren. Nun die Zucchini zugeben und
knapp weich garen. Dann die Paneerwürfel beigeben. Die Tomaten und
das Salz zufügen und umrühren.

Bei Verwendung von grünen Kochbananen müssen Sie jetzt zugefügt
werden. Bei Verwendung von Kartoffeln sollte man mit dem Zufügen so
lange warten, bis die Paneerwürfel etwas Sauce aufgesogen haben und
weich und saftig geworden sind.

Zugedeckt so lange koecheln lassen, bis alle Zutaten gar sind.
