Tofu-Ragout mit Feldsalat, Pilzen und Tomaten

150 Gramm Tofu, fest
2 Esslöffel Sojaöl; (1)
1 Esslöffel Sojaöl; (2)
3 Esslöffel Sojaöl; (3)
1 Knoblauchzehe; zerdrückt
-Salz
-Grober schwarzer Pfeffer
200 Gramm Pilze; Shiitakepilze oder
-- Champignons oder
-- Pfifferlinge
4 Esslöffel Reiswein; oder trockener Sherry
Feldsalat
150 Gramm Tomaten
1 Esslöffel Kräuter-Essig
1 Esslöffel Balsamessig
1 Esslöffel Sojasauce
Schnittlauch-Röllchen


Tofu trocken tupfen, zu fingerbreiten, etwa 2 Zentimeter langen Streifen
schneiden. In beschichteter Pfanne mit Öl (2) und dem Knoblauch bei
mittelerer hitze goldbraun braten, salzen und pfeffern. Herausnehmen, auf zwei
Teller verteilen.

Pilze putzen, Stiele herausdrehen. Die Köpfe zu dünnen Streifen
schneiden. Öl (2) in die Pfanne geben und erhitzen, Pilz-streifen
hinzufügen, leicht salzen und pfeffern. Unter öfteren Wenden 5-8 min.
schmoren, dabei nach und nach Reiswein oder Sherry angießen. Unter die
Tofu-streifen mischen.

Feldsalat putzen, waschen und trockenschleudern, Tomaten vierteln,
entkernen und zu kleinen Würfeln schneiden. Auf der Tofu-Pilz-Mischung
anrichten. Essig mit Sojasauce, etwas Salz und Pfeffer verrühren, Öl (3)
darunter schlagen, Schnittlauch hinzugeben. Über das Ragout träufeln, mit
knusprigem Stangenweißbrot auftragen.

Pro Person (ohne Brot) 360 kcal/1505 kJ.

Tipp: Mit einem Süppchen und einem Dessert wird ein kleines Menue daraus.
