Brauner Fond für vietnamesische Gerichte

Menge: 6 bis 8 Portionen

1 Zwiebel; geviertelt
3 Selleriestangen; gehackt mit
; Herz und Spitzen
2 Nelken
1 Knoblauchzehe
4 Pfefferkoerner
1 Cm Ingwerwurzel; ungeschaelt
3 7/16 l ; kaltes Wasser

Alle Zutaten in einen grossen Topf mit fest schliessendem Deckel geben
und zum Kochen bringen. Hitze so weit anpassen, dass der Fond schwach
koechelt. (Er darf nicht sprudelnd kochen, weil er sonst trueb wird.)
Vier bis fuenf Stunden koecheln lassen, dabei gelegentlich umruehren.

Abkuehlen lassen und filtern. Nach Bedarf verwenden.
