Menge: ca. 2 1/2 Liter

2 l Wasser
300 Milliliter Weißwein oder hellen Traubensaft
60 Gramm Tafelsalz
80 Gramm Lauch/Porree; fein geschnitten
80 Gramm Sellerie; fein geschnitten
80 Gramm Möhren; fein geschnitten

Alle Zutaten 15 Minuten kochen lassen. Um Fische zu garen, gibt man sie in
den heißen, aber nicht mehr kochenden Sud und lässt sie einige Minuten
darin ziehen
