800 g Fischstuecke
1 Zwiebel; grob geschnitten
1 Moehre; grob geschnitten
2 Selleriestangen; grob
-- geschnitten
1 Knoblauchzehe
4 Schwarze Pfefferkoerner
1 1/8 l ; Wasser

Alle Zutaten in einen schweren Topf mit gut schliessendem Deckel
geben. Zum Kochen bringen. Hitze sofort reduzieren und grauen Schaum
abschoepfen, bis der Fond klar ist. Herdplatte so einstellen, dass der
Fond zugedeckt etwa drei Stunden koechelt. Nach Bedarf verwenden.
