Innereien sind gut zubereitet sehr schmackhaft.
Sie sind gesund, weil sie wenig Kalorien/Joule haben, dafuer viel
Eiweiss, Vitamine, und Mineralstoffe.

Leber, Niere, Hirn und Bries eignen sich gut, weil es nicht laenger
als 10 Minuten dauert, bis sie gar sind.

Genauso gehoert die Zunge zu den Innereien, was ich erst nicht wusste.
Kalbsniere wird sehr geschaetzt, obwohl sie etwa so teuer ist, wie ein

Steak
Rinder- und Schweinenieren sind da etwas preiswerter als jedes andere
Fleisch.

Zu Nieren passen:
Estragon, Kerbel, Petersilie, Majoran, Thymian Rosmarin, Salbei,
Curry, Pilzpulver, Senf, Essig, Worcestersosse, Madeirawein, Cognac,
Knoblauch und Zwiebel.

Zu Leber passen:
frische Kraeuter wie Estragon, Kerbel, Petersilie, Pimpernelle,,
Schnittlauch, Salbei, auch getrockneter Majoran, Thymian, Rosmarin,
und Pfeffer, Muskat, Curry, Essig, Rotwein und Zwiebel.

Zu Herz passen:
Nelken, Majoran, Petersilie, Lorbeerblaetter, Wacholderbeeren,
Rosmarin, Rotwein und Zwiebel.

Zu Kalbsbries passen:
Estragon, Petersilie, Schnittlauch, Cayennepfeffer, Muskat, Kapern,
Zitronensaft, Weisswein, Wermutwein, Worcester- und Tabascosauce und
Zwiebeln.

Sparsam wuerzen.

Zu Hirn passen:
Petersilie, weisser Pfeffer, edelsuesses Paprikapulver, Zitronensaft,
Weisswein, Sherry, Worcestersosse, Sardellen, Kapern, geriebener
Kaese. Zu gekochtem Hirn schmeckt ausgezeichnet mit einer Senf-,
Sardellen- oder Tomatensauce, gebratenes Hirn mit einer Remouladen-
oder Kraeutersauce.

Zu Zunge passen:
Thymian, Pfeffer, Zitronensaft und Senf, verfeinert mit Sahne oder
Madeirawein.
