Fleischextrakt ist eine stark konzentrierte, pastenartige Fleischbruehe
von unbegrenzter Haltbarkeit, eine Erfindung des deutschen Chemikers
Justus von Liebig (1803-1873), um den Fleischueberschuss in Uruquay und
Argentinien zu nutzen.

Liebigs Fleischextrakt enthaelt 19,5% Wasser, 60,1% organische
Substanzen und 20,4% Mineralstoffe. Fleischextrakt regt den Appetit
an, foerdert die Verdauung und wird zur Herstellung von Fleischbruehe
und zur Verfeinerung vieler Suppen, Saucen und Fleischgerichte
verwendet.
