Kerbel-Pinienkern-Sauce zum Spargel

Menge: 1 Rezept

1 Schalotte
1 tb Butter
2 Handvoll Kerbel
125 ml Spargelwasser
150 g Schmand
4 tb Pinienkerne
Salz
Weißer Pfeffer

1. Schalotte abziehen, hacken und in heißer Butter glasig dünsten.
Kerbel waschen und die Blättchen von den Stielen zupfen. Ein paar
Blättchen beiseite legen. Übrigen Kerbel zur Schalotte geben und kurz
mitdünsten.

2. Spargelwasser dazugießen und den Schmand einrühren. Alles etwa 5
Minuten köcheln. Pinienkerne ohne Fett in einer beschichteten Pfanne
rösten.

3. Sauce im Mixer pürieren. Mit Salz und Pfeffer abschmecken.

4. Kerbel-Sauce über den Spargel geben, mit den übrigen
Kerbelblättchen und Pinienkernen überstreuen.

Paßt zu weißem Spargel.
