350 ml Milch
150 ml Mineralwasser

Eier gut verquirlen, Mehl, Salz und Milch zufuegen. Mit dem Schneebesen
kraeftig glatt ruehren. Nach und nach so viel Mineralwasser unterschlagen,
dass ein sehr duenner Teig entsteht. 1/2 h quellen lassen.

Beschichtete oder gusseiserne Pfanne mit etwas Fett (Butter, Margarine,
Butterschmalz, Oel) ausstreichen. Pfanne sehr heiss werden lassen. Jeweils
eine kleine Schoepfkelle Teig hineingiessen und sofort schwenken, damit er
sich schnell ueberall verteilt. Bei mittlerer Hitze auf beiden Seiten
goldbraun braten. Sobald sich der Aussenrand kraeuselt, die Eierkuchen mit
Hilfe einer Palette wenden und fertig backen.

TIPS:
Die Milch durch die halbe Menge Sahne oder Creme fraiche ersetzen - das
macht die Eierkuchen noch zarter. Die Kohlensaeure von Minerlwasser, Bier
oder Apfelwein lockert den Teig. Mit Rote-Bete-Saft oder anderen
Gemuesesaeften lassen sich neue Geschmackserlebnisse erzielen.

Fuer besonders luftige Pfannkuchen Eier getrennt verarbeiten. Steif
geschlagenes Eiweiss vor dem Backen unterheben.

Ein Teil des Mehls laesst sich durch feingemahlenen Buchweizen, Gruenkern,
Mais oder anderes Vollkornmehl ersetzen.

Kraeuter wie Schnittlauch, Kerbel oder Rosmarin sorgen ebenso fuer Finesse
wie Gewuerze, zB. Muskat, zerstossener Anis oder Kuemmel.
