Menge: etwa 500 Gramm

75 Gramm Weizenmehl (Typ 1050)
225 Gramm Weizenmehl (Typ 405)
300 Milliliter lauwarmes Wasser

Sieben Sie zuerst die beiden Mehlsorten getrennt in ein zwei Schüsseln. Dann verkneten Sie das Mehl (Typ 1050)
mit 75 Milliliter lauwarmen Wasser zu einem geschmeidigen Teig und lassen ihn mit einem sauberen Geschirrtuch
abgedeckt an einem warmen Ort für 48 Stunden gehen.

Nach der Ruhezeit geben Sie bitte erneut 75 Milliliter lauwarmes Wasser sowie 75 Gramm des Mehles des Typs 405
zu dem Teig und arbeiten beide Zutaten ein. Danach lassen Sie den Teig wieder abgedeckt an einem warmen Ort gehen.

Nach etwa 24 Stunden kneten Sie das restliche Mehl und das restliche Wasser in den Teig und lassen ihn ein letzes
Mals für etwa 24 Stunden an einem warmen Ort ruhen.
