325 Gramm Mandelmehl
65 Gramm Haferflocken
30 Gramm veganes Proteinpulver (zum Beispiel von )
6 Esslöffel Margarine
28 Gramm Ei-Ersatz (von RUF)
200 Milliliter Mineralwasser (medium)
6 Esslöffel Mandelmilch

Außerdem:
ein langer Zahnstocher

Füllen Sie als erstes den Ei-Ersatz in eine Schüsse und verrühren Sie ihn mit dem Mineralwasser
(mit einer Gabel geht das am besten).

Dann heizen Sie den Backofen auf 180 Grad Celsius (Oberhitze/Unterhitze) vor. Anschließend geben
Sie das Mandelmehl, den Stevia, das Backpulver, den Natron, das vegane Proteinpulver und den Xanthan
in ein feines Sieb und sieben die Zutaten in eine mittelgroße Schüssel. Danach geben Sie die
Haferflocken dazu.

In eine große Schüssel geben Sie jetzt den Sojajoghurt und die Margarine. Anschließend rühren Sie das
gesiebte Mandelmehl unter den Ei-Ersatz. Nun vermischen Sie die Zutaten gut, gießen danach die
Mandelmilch ein und vermengen wieder alles gut. Danach geben sie die trockenen Zutaten aus der ersten
Schüssel in die große Schüssel und vermengen das Ganze wieder.

Jetzt fetten Sie eine Backform mit der Margarine ein, geben den Teig in die Form und backen ihn
etwa 45 bis 50 Minuten bis die Oberfläche gold-braun ist. Zum Test können Sie einen Zahnstocher
hineinstecken: Wenn er wieder trocken heraus kommt, ist das Brot fertig.

Zum Schluss lassen Sie das Brot bitte 15 Minuten lang (mit einem sauberen Geschirrtuch abgedeckt)
abkühlen.

Ruhezeit etwa 15 Minuten
Backzeit: etwa 45-50 Minuten
