2 große Zucchini (in Würfel geschnitten)
300 Gramm veganes Hackfleisch
1 Zwiebel (fein gehackt)
2 Knoblauchzehen (fein gehackt)
1 Paprika (in Streifen geschnitten)
200 Gramm Kirschtomaten (halbiert)
100 Milliliter Gemüsebrühe (vegane)
2 Esslöffel Rapsöl oder Sonnenblumenöl
1 Teelöffel Paprikapulver (edelsüß)
1 Teelöffel Oregano (getrocknet)
Etwas Salz
Etwas Pfeffer, frisch aus der Mühle

In einer großen Pfanne das Rapsöl oder Sonnenblumenöl erhitzen und die gehackte Zwiebel sowie den Knoblauch darin anbraten, bis sie weich sind.

Das vegane Hackfleisch hinzufügen und unter gelegentlichem Rühren anbraten, bis es leicht gebräunt ist.

Zucchiniwürfel und Paprikastreifen dazugeben und alles zusammen etwa 5 Minuten anbraten.

Die Kirschtomaten und die Gemüsebrühe (vegane) hinzufügen. Paprikapulver, Oregano, Salz und Pfeffer in die Pfanne geben und alles gut vermengen.

Die Pfanne bei mittlerer Hitze für etwa 10 Minuten köcheln lassen, bis das Gemüse weich und die Flüssigkeit etwas eingedickt ist.

Unsere Tipps:

Fügen Sie frische Kräuter wie Basilikum oder Petersilie hinzu, um der Pfanne eine frische Note zu geben.

Servieren Sie die Zucchini-Hackfleisch-Pfanne mit Reis, Quinoa oder Nudeln, um das Gericht zu vervollständigen.

Für eine leichte Schärfe können Sie etwas Chiliflocken über das fertige Gericht streuen.
