1 Kilogramm Kartoffeln (festkochend)
1 Esslöffel Gemüsebrühe
4 Eigelbe
etwas Tafelsalz
etwas Muskatnuss
4 Esslöffel Sahne

Schälen Sie die Kartoffeln, spülen Sie sie gut ab und kochen Sie sie in der Gemüsebrühe gar. Danach gießen
Sie die Kartoffeln ab und dämpfen sie kurz trocken bevor Sie die Kartoffeln pürieren. Nun ziehen Sie 3 Eigelbe
unter und schmecken das Püree mit Tafelsalz und Muskat ab. Die Masse geben Sie dann in einen Spritzbeutel mit
einer Sterntülle und dressieren sie rosettenförmig auf ein gefettetes Blech. Anschließend verrühren Sie das
restliche Eigelb in einer Schüssel mit der Sahne und pinseln die Kartoffeln damit ein. Zum Schluss backen
Sie die Herzoginkartoffeln im Backofen bei 200 Grad Celsius (Umluft/Heißluft) gold-gelb.
