1/2 l Wasser (2)

Den Maismehl-Teig fünf Tage gären lassen. Anschließend mit Salz und
kaltem Wasser (1) mischen, bis ein dünner Brei entsteht.

Wasser (2) zum Kochen bringen. Unter ständigem Rühren langsam den
Mehlbrei zugeben und köcheln, bis er zunehmend fester wird.
Gelegentlich etwas Wasser zugießen, um den Teig geschmeidig zu
halten. 20 Minuten ständig rühren. Vom Herd nehmen und abkühlen
lassen.

Aus dem Teig Tennisball-große Klösse formen. Heiß oder kalt
servieren.
