Menge: 1 Brot

1 1/2 Würfel frische Hefe
350 Gramm Mehl (Typ 550)
1/2 Teelöffel Tafelsalz
Fett für das Blech

Zerbröckelte Hefe und 70 Kubikzentimeter lauwarmes Wasser verrühren.
250 Gramm Mehl in eine Schüssel geben und in die Mitte eine Mulde drücken.
Hefe und weitere 100 Kubikzentimeter lauwarmes Wasser zugießen. Zu einem
dicken Brei verrühren. Zugedeckt mindestens zwei Stunden (am Besten
über Nacht) gehen lassen. Tafelsalz und das restliche Mehl mit den
Händen unterkneten. Weitere 30 Minuten gehen lassen. Aus dem Teig
einen länglichen Laib formen. Auf ein gefettetes Backblech legen
und nochmals 15 Minuten gehen lassen. Backofen auf 200 Grad Celsius
vorheizen und das Brot 1 Stunde backen.

Etwa 1325 Kalorien.
