2 Bund glatte Petersilie
2 Esslöffel Olivenöl
300 Gramm gegarte, rote Linsen (etwa 150 Gramm Rohgewicht)
300 Gramm gegarte, gelbe Linsen (etwa 150 Gramm Rohgewicht)
300 Gramm gegarte, grüne Linsen (etwa 130 Gramm Rohgewicht)
etwas Salz
1 Prise gemahlenen Pfeffer frisch aus der Mühle
300 Milliliter Gemüsebrühe oder Gemüsefond

Putzen Sie die Frühlingszwiebeln, spülen Sie sie ab und schneiden Sie sie in feine Scheiben. Dann spülen
Sie die Tomaten ab, halbieren sie und schneiden die Stängelansätze heraus. Danach werden die Tomaten
gewürfelt. Anschließend spülen Sie die Petersilie ab, schütteln sie kurz trocken, zupfen die Blätter von
den Stängeln und schneiden die Petersilien-Blätter klein. Dann erhitzen Sie das Olivenöl in einer großen
Pfanne und dünsten die Frühlingszwiebel-scheiben und die Tomatenwürfel darin unter Rühren an. Nun fügen
Sie die roten, die gelben und die grünen Linsen mit der geschnittenen Petersilie hinzu und würzen Alles mit
Pfeffer und Salz.

Anschließend geben Sie die Gemüsebrühe oder den Gemüsefond hinzu, bringen das Ganze zum Kochen und lassen
es bei schwacher Hitze etwas Kochen.
