Menge: 2 Portionen

500 Gramm gemischte Pilze (zum Beispiel Champignons, Pfifferlinge, Steinpilze und Austernpilze)
2 Esslöffel Mehl
5 Frühlingszwiebeln
1/2 Bund glatte Petersilie
2 Esslöffel Speiseöl
etwas Salz
1 Prise gemahlenen Pfeffer frisch aus der Mühle

Putzen Sie die Pilze:
Pilze sind sehr heikel mit Wasser, sie saugen es auf und dann haben Sie nur Wassergeschmack Deshalb
sollte Sie die Pilze auch nie ins Wasser legen. Stattdessen lösen Sie bitte zwei Esslöffel Mehl in
einer Schüssel Wasser auflösen und waschen die Pilze darin etwa 1 - 2 Minuten darin. Das Mehl wirkt
wie Schmirgelpapier und die Pilze nehmen so kaum Wasser auf.

Die großen Pilze halbieren oder vierteln Sie bitte. Dann putzen Sie die Frühlingszwiebeln, spülen sie ab
und schneiden sie in feine Scheiben. Danach spülen Sie die Petersilie ab, schütteln sie kurz trocken, zupfen die
Petersilien-blätter von den Stängeln und schneiden die Blätter dann klein. Nun erhitzen Sie das
Speiseöl in einer großen Pfanne oder einem Wok und braten die Pilze sowie die Frühlingszwiebel-scheiben
darin eventuell portionsweise an an (dabei müssen Sie gelegentlich Rühren). Gewürzt wird das Ganze
dann mit Pfeffer und Salz, danach düsten Sie das Gericht weitere 2-3 Minuten. Anschließend heben Sie
die geschnittenen Petersilien-Blätter unter die Pilz-Pfanne und servieren die gemischte Pilz-Pfanne dann.

Unser Tipp:
Diese Pilz-Pfanne ist eine sehr gute Beilage zu gedünstetem Reis.
