10 Zwiebeln
300 g Putenfleisch
1 Scheibe Gekochter Schinken
2 Esslöffel Zwiebeln, klein gehackt
1/2 Esslöffel Thymian, getrocknet
1/2 Esslöffel Rosmarin, getrocknet
1 Ei
Petersilie
1 Knoblauchzehe
Toastbrot, gerieben, oder
-- Semmelbrösel
1 kg Kalbsknochen
Traubenkernöl oder Butter
-- zum Anbraten
1 Bund Suppengemüse
3 Pfefferkörner
1 Lorbeerblatt
1 Esslöffel Tomatenmark
3 Wacholderbeeren
700 ml Rotwein
1 l Wasser
Salz
Pfeffer
10 Esslöffel Balsamessig (1 Esslöffel/Zwiebel)

Knochen und grob geschnittenes Gemüse in einem Topf anrösten.
Das Tomatenmark zufügen und alles mit Rotwein und Wasser
aufgießen. Die Gewürze beigeben und bei offenem Topf etwa
2 Stunden köcheln lassen. Durch ein Sieb passieren und mit diesem
Bratenfond die Zwiebeln angießen.
