Mangold in Rahmsoße

Menge: 3 Portionen

750 g Mangold
4 Schalotten
20 g Butterschmalz
Salz
Pfeffer
1/8 l Wasser
200 g Crème fraîche
3 Eigelb

Mangold-blätter von den Stengeln trennen und beides in feine Streifen
schneiden. Schalotten fein hacken. Butterschmalz erhitzen und
Schalotten darin andünsten. Mangold dazugeben, mit Salz und Pfeffer
würzen und Wasser angießen. Gemüse 10 bis 15 Minuten dünsten.
Gemüsewasser abgießen.

Crème fraîche mit Eigelb verquirlen, unter den Mangold rühren und
5 Minuten durchziehen, aber nicht mehr kochen lassen.
