Menge: 3 Portionen

300 Gramm Pilze, gemischte, Eierschwammerl, Steinpilz, und Champignons. Gewaschen und in Viertel geschnitten
2 Esslöffel Mehl
1 mittel-große Schalotte, sehr fein geschnitten
1 Zehen Knoblauch, sehr fein geschnitten
2 Esslöffel Öl, pflanzliches
4 Zweige Thymian
1 Esslöffel Mehl
1 Deziliter Weißwein
2 Deziliter Gemüsebrühe
etwas Zitronensaft
etwas Worcestershiresauce
1 Deziliter Sahne
etwas Salz und Pfeffer, weißer
1 Esslöffel Schnittlauch, fein geschnittener

Erst putzen Sie die Pilze:
Pilze sind sehr heikel mit Wasser, sie saugen es auf und dann haben Sie nur Wassergeschmack Deshalb
sollte Sie die Pilze auch nie ins Wasser legen. Stattdessen lösen Sie bitte zwei Esslöffel Mehl in
einer Schüssel Wasser auflösen und waschen die Pilze darin etwa 1 - 2 Minuten darin. Das Mehl wirkt
wie Schmirgelpapier und die Pilze nehmen so kaum Wasser auf.

Das Öl erhitzen Sie und dünsten den Knoblauch und die Schalotte darin an. Dann geben Sie Pilze und den Thymian dazu,
und dünsten alles bei mittlerer Hitze etwa 2-3 Minuten. Danach bestäuben Sie mit dem Mehl, mischen schnell und gut
durch und löschen die Sauce sofort mit dem Weißwein und der Gemüsebrühe ab. Nun geben Sie den Zitronensaft und die
Worcestershire-Sauce bei und lassen das Ganze etwa 10 bis 12 Minuten kochen.

Anschließend entfernen Sie den Thymian, geben die Sahne bei und lassen die Sauce etwa 3 Minuten einköcheln.
Abgeschmeckt wird mit Pfeffer und Salz, ganz am Schluss müssen Sie den Schnittlauch einrühren.
