250 Gramm Champignons
2 Esslöffel Mehl
1/2 Zitrone, den Saft davon
2 Bund Radieschen
1 Kästchen Kresse

Für die Salatsauce:
2 Esslöffel Weißweinessig
etwas Salz
1 Prise gemahlenen Pfeffer frisch aus der Mühle
etwas Zucker
3 Esslöffel Speiseöl

Erst putzen Sie die Champignons:
Pilze sind sehr heikel mit Wasser, sie saugen es auf und dann haben Sie nur Wassergeschmack Deshalb
sollte Sie die Pilze auch nie ins Wasser legen. Stattdessen lösen Sie bitte zwei Esslöffel Mehl in
einer Schüssel Wasser auflösen und waschen die Pilze darin etwa 1 - 2 Minuten darin. Das Mehl wirkt
wie Schmirgelpapier und die Pilze nehmen so kaum Wasser auf. Danach beträufeln Sie die Champignonscheiben
bitte mit dem Zitronensaft.

Anschließend putzen Sie die Radieschen, spülen sie ab und schneiden sie in Scheiben. Dann spülen Sie die
Kresse ab und schneiden sie von dem Beet. Für die Salatsauce verrühren Sie den Essig mit dem Salz, etwas
Pfeffer und 1 Prise Zucker in einer Schüssel. Danach schlagen Sie das Speiseöl unter. Die verarbeiteten
Salat-zutaten geben Sie nun hinzu und mischen sie unter. Den Radieschen-Pilz-Salat lassen Sie zum Schluss im
Kühlschrank etwa 15-20 Minuten durchziehen und richten ihn dann auf Salattellern an.
