1 Kilogramm Rippenstück vom Schwein
150 Gramm - 200 Gramm Backpflaumen
3 bis 4 kleine Äpfel
etwas Pfeffer , frisch aus der Mühle
etwas Tafelsalz
Majoran
eventuell Kardamom
eventuell Beifuß
1 1/2 Esslöffel Senf
etwas Tomatenmark
1 Teelöffel Honig
1 Esslöffel Fleischbrühe (Instant)
Speisestärke

Heizen Sie den Backofen aus etwa 200 Grad bis 220 Grad Celsius vor.

In das Schweinerippenstück über den Rippen seitlich erst eine Tasche schneiden und innen mit Pfeffer, Salz, eventuell
etwas Kardamom, eventuell etwas Beifuß, etwas Senf, Majoran, etwas Tomatenmark und gegebenenfalls zur Weihnachtszeit
mit etwas Zimt würzen.

Anschließend die Tasche mit den Backpflaumen und Äpfeln füllen und die Tasche mit Küchengarn vernähen.

Außen dann ebenfalls mit Pfeffer, Salz und Majoran würzen und zusätzlich mit Senf und etwas Honig bestreichen.

Im Bratentopf zuerst 90 Minuten im vorgeheizten Ofen schmoren, mit Fleischbrühe oder nur etwas Wasser ablöschen und
später häufig mit der Fleischbrühe oder Wasser übergießen. Wenn der Braten Farbe angenommen, die Temperatur etwas
reduzieren.

Danach den garen Braten herausnehmen, aufschneiden, die Soße abschmecken und mit der in Wasser verrührten Speisestärke
bis zur gewünschten Sämigkeit anrühren.

Das aufgeschnittene Fleisch anschließend mit den Äpfeln, den Backpflaumen, eventuell Rotkohl, der Soße und Petersilienkartoffeln
servieren. Zu Feiertagen können Sie auch sehr gut Klöße servieren.
