Menge: 6 Portionen

1 Kilogramm geschälte Kartoffeln
1 Zwiebel
500 Gramm vorgekochter Klippfisch
200 Gramm Speck
1 Prise Pfeffer
Salz

Die geschälten Kartoffeln kochen Sie in Salzwasser und stampfen sie dann gut durch. Zwischendurch
würfeln Sie die Zwiebel und dünsten sie in einem Topf glasig, bevor Sie den vorgekochten, feingehackten
Klippfisch dazu geben. Nun geben Sie die Kartoffen dazu, vermischen alles und verrühren es zu einem
Brei. Gewürzt wird der Labskaus mit Pfeffer und Salz.

Heiß Servieren !
Dazu können Sie etwas gebratenen Speck in Würfeln geschnitten servieren.

Klippfisch ist übrigens getrockneter und gesalzener Kabeljau, der im Gegenswatz
zu Stockfischen nicht auf Stäben, sndern aufgeschnitten auf den Klippen
getrocknet wurde.
