2 mittelgroße Äpfel (Boskop)
1/2 Tasse braunen Zucker
1/2 Tasse pflanzliche Margarine, weich (vegane)
1 Tasse Mehl
1 1/2 Teelöffel Backpulver
1 Teelöffel Zimt
1/2 Teelöffel Salz
1/2 Tasse pflanzliche Milch (z.B. Mandelmilch)
1 Teelöffel Vanilleextrakt

Außerdem:
1 Zahnstocher

Heizen Sie den Backofen auf 180 Grad Celsius vor und fetten Sie nebenbei eine 20 x 20 Zentimeter Backform mit etwas Margarine ein.

Dann legen Sie die Apfelscheiben in einer Schicht auf den Boden der Backform und streuen 1/4 Tasse braunen Zucker darüber.

Danach schlagen Sie den Rest der weichen Margarine und den restlichen Zucker schaumig, bis die Margarine leicht und flauschig ist.

Anschließend sieben Sie das Mehl, das Backpulver, den Zimt und etwas Salz in eine Schüssel und fügen die Mehlmischung abwechselnd mit der pflanzlichen Milch und Vanilleextrakt zur Margarine-Zucker-Mischung, bis alles gut vermischt ist.

Nun gießen Sie den Teig über die Äpfel in der Backform.

Danach backen Sie den Kuchen im vorgeheizten Ofen für ca. 35 bis 40 Minuten oder bis er goldbraun ist und sich ein Zahnstocher sauber aus der Mitte des Kuchens herausziehen lässt.

Zum Schluss lassen Sie den Kuchen etwas abkühlen und servieren Sie ihn dann warm oder bei Raumtemperatur Ihren Gästen.
