Menge: 4 Portionen

2 Liter Gemüsebrühe (vegan)
1 Zwiebel
2 Zehen Knoblauch
100 Gramm süße Kokos-Polenta
1 Esslöffel Margarine
2 kleine Chilischoten
1 großer Schuss Sojamilch (oder andere pflanzliche Milch)
wenig Tafelsalz

Ziehen Sie die Zwiebel und den Knoblauch ab und schneiden Sie beide Zutaten getrennt in Würfel. Dann schneiden Sie die Chilischote mit einem großem Küchenmesser klein, zerlassen 1 Esslöffel Margarine in einem Topf und dämpfen die drei Zutaten darin etwas an.

Wenn die Zwiebelwürfel und die Knoblauchwürfel glasig sind gießen Sie den Topf mit der Gemüsebrühe auf und bringen den Topfinhalt zum Kochen. Danach lassen Sie die Polenta einrieseln und lassen die Suppe köcheln, bis die Polenta gar ist. Dabei rühren Sie den Topfinhalt bitte immer wieder mit einem Kochlöffel durch damit die Polenta nicht anbrennt.

Danach geben Sie einen Schuss pflanzliche Milch in die Suppe und schmecken sie mit Tafelsalz ab. Zum Schluss richten Sie die Suppe in vorgewärmten tiefen Tellern oder Suppentassen an und servieren sie Ihren Gästen zum Beispiel als Vorspeise oder Frühstückssuppe.
