1 Kilogramm Spargel
1 1/2 Liter Gemüsebrühe (vegan)
2 Teelöffel braunen Zucker
30 Gramm Margarine
1 Spritzer Zitronensaft
100 Milliliter Sojasahne
200 Gramm Sojajoghurt
1 1/2 Esslöffel süßen Senf
etwas Tafelsalz
etwas Pfeffer, frisch aus der Mühle

Schälen Sie den Spargel (lassen Sie den Kopf der Stangen bitte dran, der ist das beste am Spargel) und schneiden Sie die holzigen Enden mit einem großem Küchenmesser ab bevor Sie den Spargel in etwa 4 Zentimeter große Stücke schneiden. Dann zerlassen Sie die Margarine in einem Topf, geben die Spargelstücke zusammen mit dem braunen Zucker und einem Spritzer Zitronensaft in einen Topf mit der Gemüsebrühe und lassen die Zutaten etwa 20 Minuten bei großer Hitze kochen. Nach dem Kochen pürieren Sie den Spargel in der Brühe mit einem Pürierstab. Anschließend geben Sie die Sojasahne und den Sojajoghurt sowie den süßen Senf in den Topf und lassen die Suppe nochmals aufkochen. Nach dem erneuten Aufkochen schmecken Sie die Suppe bitte mit Tafelsalz und Pfeffer ab, richten sie mit einer Suppenkelle in vorgewärmten tiefen Tellern oder Suppentassen an und servieren die Suppe Ihren Gästen entweder als Vorspeise oder als Frühstückssuppe.

Unser Tipp:
Um eine feinere Konsistenz zu bekommen, sollten Sie die Suppe zum Schluss noch durch ein Sieb gießen (passieren), damit die faserigen Spargelreste herausgefiltert werden.
