1 1/2 Kilogramm Gurken; in dicke Scheiben
(wenn moeglich gerippte Gurken nehmen)

4 große Zwiebeln; in dicke Scheiben
75 Gramm Grobes Salz
etwas Eis; zerschlagen
900 Milliliter Obstessig (siehe Tipp)
1 Teelöffel Gelbwurz; gemahlen (Kurkuma, Turmeric
1 Esslöffel Senfkoerner
1 Teelöffel Selleriesamen
1/2 Teelöffel Schwarze Pfefferkoerner
6 Gewuerznelken
750 Gramm Zucker

Gurken und Zwiebeln mit Salz und Eis in eine grosse Schuessel legen.
Einen Teller darauflegen und beschweren, 3 bis 4 Stunden belassen.

Essig, Gewuerze und Zucker aufkochen, dabei ruehren, um den Zucker
aufzuloesen. Vom Feuer nehmen.

Gurken und Zwiebeln gruendlich abseihen. Den Essigsirup nochmals
aufkochen und das Gemuese hineingeben. Sobald er zu kochen beginnt,
Herdplatte abstellen.

Pickles in vorgewaermte Konservenglaeser fuellen, zudecken und zwei
Wochen ruhen lassen.
