500 Gramm Kartoffeln; festkochend
1/8 Liter Gemuesefond
3 Esslöffel Apfelessig (siehe Tipp)
etwas Kraeutersalz
1 Prise Bluetenhonig
1 Prise Schwarzer Pfeffer
1 Zwiebel; klein gewuerfelt
1 Knoblauchzehe; dito
2 Esslöffel Rapsöl
3 Esslöffel Milch
2 Eigelb

Außerdem:
etwas Brunnenkresse

Die Kartoffeln mit der Schale kochen, schaelen und noch heiss in
Scheiben schneiden.

Gemuesefond mit Essig, Salz, Honig und Pfeffer kraeftig abschmecken,
bis zum Siedepunkt erhitzen und ueber die Kartoffelscheiben giessen.
Zugedeckt 10 Minuten ziehen lassen.

Zwiebel und Knoblauch im Oel glasig anduensten - auf keinen Fall
braeunen - und vorsichtig unter die Kartoffelscheiben mischen.

Zum Schluss kommt das mit heisser Milch verquirlte Eigelb dazu.

Den warmen Salat mit Brunnenkresse bestreuen.
