Menge: 4 Portionen

1 Roemersalat
3 Zwiebeln, rot
1 Tomate
1 Bd. Salbei
4 tb Balsamessig
Salz
Pfeffer aus der Muehle
1 Prise Zucker
4 tb Oel
8 Scheiben Parmaschinken
200 g Mozzarella
Grober bunter Pfeffer zum
Bestreuen
Backpapier

Salat unter fliessendem Wasser gruendlich putzen, waschen und in Streifen
schneiden.

Zwiebeln schaelen, 2 in Ringe schneiden, restliche fein wuerfeln.

Tomate waschen, vierteln, entkernen und wuerfeln.

Salbei, bis auf einige Blaetter, in Streifen schneiden.

Essig mit Salz, Pfeffer und Zucker verruehren. Oel darunterschlagen.
Tomaten-, Zwiebelwuerfel und Salbei zugeben. Salat, Zwiebelringe und
Parmaschinken auf Tellern anrichten.

Mozzarella in 8 Scheiben schneiden. Jeweils Salbeiblaettchen darauflegen
und auf ein mit Backpapier ausgelegtes Backblech legen. Unter dem heissen
Grill des Backofens kurz ueberbacken. Je 2 Mozzarellascheiben auf die
Salatteller legen und die Tomaten-Vinaigrette daraufgeben. Mit Pfeffer
nach Belieben bestreuen.
