Menge: 6 Portionen

200 g Blattspinat, feiner
1/2 Kopf Friséesalat
6 Tomaten, mittelgroße
125 g Mozzarella-Käse

Sauce

5 Balsamessig
5 Olivenöl
1 ts Senf
1 ts Honig
1 Knoblauchzehe
Salz
Pfeffer aus der Mühle
50 g Sonnenblumenkerne
1/2 Topf Basilikum

Spinat verlesen, waschen und trockenschleudern. Friséesalat
ebenfalls vorbereiten und in mundgerechte Stücke zupfen. Tomaten
waschen und vierteln. Mozzarellakäse in dünne Scheiben schneiden.
Die vorbereiteten Salatzutaten auf Portionstellern anrichten. Für
die Sauce die angegebenen Zutaten verrühren und abschmecken.
Sonnenblumenkerne in einer trockenen Pfanne goldbraun rösten. Unter
die Sauce rühren und über den Salat verteilen. Zuletzt die
Basilikumblättchen darüberstreuen und sofort servieren.
