Menge: 4 Portionen

1 x Grundrezept Hefe- oder Quark
- -Oel-Teig

Fuer den Belag:

1 St Aubergine, mittelgross,
- ca. 250 g
3 tb Olivenoel; kaltgepresstes
250 g Tomaten; vollreife, frische
Salz
Pfeffer; schwarz, a.d.M.
100 g Artischockenherzen; in Oel
- und Kraeutern
- eingelegt
100 g Peperoncini; in Oel
- eingelegt
2 ts Kapern, kleine Sorte
150 g Mozzarella-Kaese
2 ts Kraeuter der Provence
2 tb Kraeuteroel; von den
- Artischocken


Den Teig wie im Rezept beschrieben vorbereiten. Fuer ein
grosses Backblech mit zwei verschiedenen Belaegen die doppelte
Teigmenge herstellen.

Ofen je nach Teig auf 175 oder 250 Grad vorheizen.

Von der Aubergine die Manschette rundum abschneiden, den Stiel
dranlassen. Aubergine waschen und mit Kuechenkrepp
trockentupfen. Mit einem scharfen Kuechenmesser oder dem
Kartoffelschaeler jeweils im Abstand von 2cm laengs etwa 1cm
breite Streifen aus der Haut herausschneiden. Die vorbereitete
Aubergine in der Pfanne in heissem Olivenoel anbraten und etwa
10 Minuten vorgaren.

Die Tomaten mit kochendem Wasser ueberbruehen, kurz stehen
lassen und pellen; halbieren, Stielansaetze herausschneiden und
das waessrige Innere entfernen. Das Tomatenfleisch in duenne
Scheiben schneiden. Aubergine ebenfalls in Scheiben schneiden.

Blech einfetten, (besser bemehlen). Teig ausrollen und auf das
Blech legen. Einen schmalen Rand formen. Fuer eine Pizza mit
zwei Belaegen auf einem grossen Blech (doppelte Teigmenge) mit
einem duennen Teigstreifen eine Trennlinie markieren.

Vorbereitetes Gemuese abwechselnd auf dem Teig verteilen,
kraeftig salzen und pfeffern. Die Artischockenherzen halbieren,
mit Peperoncini und Kapern ebenfalls auf die Pizza legen.

Mozzarella in duenne Scheiben schneiden und das Gemuese damit
bedecken. Kraeuter der Provence darueberstreuen und ueber alles
Kraeuteroel von den Artischocken traeufeln. 25-30 Minuten
backen.
