Menge: 4 Portionen

400 g. Bandnudeln
50 g. Butter
50 g. Emmentaler, gerieben
150 g. Ziegenkaese, frischer
1 Mozzarella
70 g. Parmesankaese, gerieben
1 c Milch
3 tb Weissweinessig
4 Eier
Salz
4 tb Tomatensauce


Bandnudeln halb! gar kochen, abtropfen lassen. In eine gefettete
Auflaufform geben, sofort Butter, Emmentaler und gewuerfelten
Ziegenkaese dazugeben. Alle Zutaten gut miteinander vermischen.

Mit, in feine Scheiben geschnittenen Mozzarella, bedecken und mit 50 g
Parmesankaese bestreuen. Die Milch uebergiessen und im vorgeheizten! Herd
bei 180Grad ca. 15 Minuten backen.

In der Zwischenzeit 1 l Salzwasser zusammen mit dem Essig zum Kochen
bringen. Temperatur etwas herunterschalten. Ein Ei auf einer
Untertasse aufschlagen und ins Wasser gleiten lassen. 3 Minuten
aufkoche, dann das Ei mit einem Schaumloeffel herausnehmen, abtropfen
lassen und auf die ueberbackenen Nudeln setzen.

Auf die selbe Art mit den anderen Eier vorgehen. Dann ueber jedem Ei
die warme Tomatensauce verteilen und mit dem restlichen Parmesankaese
bestreuen. SOFORT servieren.
