200 Milliliter Speiseöl
250 Gramm Tofu, kleine Stücke
250 Gramm chinesische Eiernudeln oder Spaghetti
50 Milliliter Gemüsebrühe
1 Esslöffel Sojasauce
1 Esslöffel Speisestärke
4 Esslöffel Erdnussöl
2 Knoblauchzehen, gehackt
1 Teelöffel frischer Ingwer, fein gehackt
100 Gramm Möhren, feine Streifen
200 Gramm Lauch/Porree, Ringe
100 Gramm Champignons, Scheiben
100 Gramm Mungosprossen
100 Gramm Spinat
1 Teelöffel geröstetes Sesamöl
1 Esslöffel frischer Koriander
oder Petersilie, fein gehackt

Mu-Err Pilze in warmem Wasser 1 Stunde quellen lassen, in Stücke schneiden, abwaschen. Spargel in kochendem Salzwasser
2 Minuten blanchieren, abgießen. Das Öl im Wok erhitzen, die Tofuwürfel rundherum hellbraun frittieren, auf einem
PapierGeschirrtuch abtropfen lassen. Nudeln al dente kochen. 2 Esslöffel Öl im Wok erhitzen, Nudeln 2 Minuten unter
Rühren anbraten, aus dem Wok nehmen. 2 Esslöffel Öl erhitzen, Knoblauch und Ingwer kurz anbraten, Möhren und Pilze
dazugeben, unter Rühren 1 Minute braten. Spargel, Lauch, Champignons und Sprossen dazugeben, leicht salzen und unter
Rühren 1 Minute braten. Gemüsebrühe und Sojasauce dazu gießen, zugedeckt 3 Minuten dünsten. Speisestärke in 3 Esslöffel
Wasser auflösen und unterrühren. Aufkochen lassen. Vom Feuer nehmen und das geröstete Sesamöl untermischen. Mit den
Kräutern garnieren.
