75 g Mehl
1 Ei (Größe M)
110 ml Prosecco-Wein
; Salz
; Pfeffer
2 bn Basilikum; ersatzweise
30 g ; gemischte TK-Kraeuter
1/2 Zitrone; unbehandelt, davon
1/2 ts ; Zitronensaft
1 tb Olivenoel
1 Knoblauchzehe
10 sm Mozzarella-Kugeln
100 g Parmaschinken; hauchduenn
- geschnitten
1/2 ts ; Zucker
Mehl zum Panieren
Sojaoel zum Fritieren

Mehl mit Eigelb, Prosecco, Salz und Pfeffer glattruehren. 15 Minuten
ruhen lassen.

Basilikum hacken (Kraeuter auftauen lassen), mit Zitronensaft und
etwas abgeriebener Zitronenschale, Olivenoel, Salz, Pfeffer und
geschaeltem, durchgepresstem Knoblauch verruehren.

Mozzarella-Kugeln quer halbieren. Auf eine Haelfte jeweils etwas
Basilikum-Paste geben, die zweite Haelfte daraufsetzen. Mit Schinken
umhuellen, festdruecken.

Eiweiss mit Zucker steif schlagen, unter den Teig heben. Kaese in Mehl
waelzen, durch den Teig ziehen und in heissem Sojaoel 2 Minuten
ausbacken.

Dazu Tomatensalat servieren.
