Menge: 2 Portionen

1 Kilogramm Weizenmehl (Typ 1050)
2 Tüten Trockenhefe
25 Gramm Salz
550 Gramm Wasser
1 Esslöffel Brotgewürz oder Kümmel (siehe Tipps)

Mehl in eine Schüssel sieben, Hefe und Salz zugeben, alles gut mischen.
Wasser portionsweise zugeben. Erst mit dem Kochlöffel, dann mit den
Händen 10 Minuten kneten. Zur Kugel formen, die in einer Schüssel mit
feuchtem Geschirrtuch bedeckt am warmen Ort 2 Stunden gehenlassen.

Wieder kneten, pro Brot den Teig in je ein Stück aufteilen. In ein
Fladenstück Gewürz einkneten. Die Stücke zu länglichen Laiben formen,
auf ein geöltes Backblech legen.

Backofen auf 200 Grad, Umluftofen 180 Grad, Gasofen Stufe 4
einschalten. Brote mit nassem Tuch bedeckt 30 Min. gehenlassen, mit
kalten Wasser bepinseln oder mit je 1 EL Mehl bestreuen. Laibe 3 bis
4 mal ca. 1 cm tief einschneiden. 1 Std. backen. Laibe umdrehen,
nochmals 15 Min. backen (2 Monate tiefgekuehlt haltbar).
