200 Gramm altbackenes Schwarzbrot ohne
- Rinde
1 1/2 Zentiliter Aprikosen-hälften
(Abtropfgewicht zusammen 360 Gramm)
50 Gramm Zartbitterschokolade
250 Gramm kernige Haferflocken
250 Gramm Puderzucker
6 Eier, getrennt (Größe M)
1 Messerspitze gemahlener Zimt
1 Messerspitze gemahlene Nelken
80 Gramm Sojaöl
abgerieben Schale einer
- Zitrone
50 Gramm Mehl
1 Päckchen Backpulver

Belag:

150 Gramm Zucker
20 Gramm Sojaöl
2 Esslöffel flüssiger Honig
2 Esslöffel Milch
150 Gramm kernige Haferflocken

Für den Teig das Schwarzbrot reiben und in 250 Milliliter Aprikosensaft
weichen lassen. Die Aprikosen auf Küchenpapier legen. Schokolade fein
zerbröckeln. Haferflocken in einer Pfanne ohne Fett hell anrösten.
Eigelb mit Puderzucker, Zimt und Nelken schaumig schlagen. Öl in
dünnem Strahl und Zitronenschale zugeben. Das gesiebte Mehl,
Backpulver, Haferflocken und Schokolade in einer Schüssel mischen und
unter die Ei-Masse rühren. Das Brot zugeben und ebenfalls unterrühren.
Eiweiß sehr steif schlagen und unterheben.

Eine Springform (26 cm) ausbuttern, den Teig einfüllen und
glattstreichen und die Aprikosen darauf verteilen, dabei die Früchte
etwa 1 cm tief in den Teig drücken. Im vorgeheizten Herd bei 175 Grad
auf der untersten Schiene etwa 30 Minuten vorbacken.

Inzwischen für den Belag Zucker, Öl, Honig und Milch zusammenrühren
und erwärmen, dann die Haferflocken unterrühren. Abkühlen lassen.
Dann auf den vor-gebackenen Kuchen streichen (das geht am besten mit
einer Gabel). Weitere 20 Minuten backen, nach 10 Minuten die
Oberfläche mit Alufolie abdecken. Den Kuchen in der Form 15 Minuten
abkühlen lassen. Mit einem spitzen Messer vorsichtig den Rand langsam
lösen, dann auf ein Kuchen-gitter geben und völlig auskühlen lassen. Am
besten erst am nächsten Tag anschneiden und mit Puderzucker besieben.
